  • 800 g veal (nut, long side or shoulder part)
  • 200 g of soup vegetables from onion, carrots and celery
  • 4 crushed peppercorns
  • 1 small bay leaf
  • freshly ground pepper

  • 200 g tuna in oil
  • 100 ml meat soup
  • 25 ml of cucumber vinegar
  • 1 teaspoon of capers
  • 2 anchovy fillets
  • 4 tbsp white wine
  • 100 g mayonnaise
  • freshly ground pepper
The soup vegetable brush, wash, place in boiling water and salt
The veal and allow to simmer remove from the broth and let cool in cold water. For the tuna sauce tuna drain well and divide into small pieces. Along with the meat soup, the cucumber vinegar, capers and mash the anchovy fillets in electric blender. May pass through a fine sieve. Season with salt and pepper. The sauce should be rather thin. The cooled meat into uniformly thin slices (with hand or slicer), arrange on plates or a platter and cover with tuna sauce.
